Getting back into the swing of things after spring break and any holiday is always tough for me. It seems as though once we get through one holiday, another one pops up and we have another excuse to keep eating unhealthy. First Halloween, then Thanksgiving, then Christmas, New Years, Valentine's Day and before we know it, Easter. I don’t know about you, but we are not the kind of family that eats steamed chicken and a side of celery for special occasions. BORING. But what if I told you that YOU CAN have delicious AND healthy? Why yes, yes you can.
Healthy chicken fingers anyone?
I was very excited to be introduced to Perdue’s new organic chicken line, Perdue® Simply Smart® Organics. At first, I was a little apprehensive because the word organic usually means it comes with a hefty price tag. Not this time my friends! Can we get a winner winner chicken dinner?! Perdue® Simply Smart®Organicshas hit the mark on hassle-free fully cooked, frozen and refrigerated chicken products that are 100% USDA certified. This chicken line is a smarter choice with 25% fewer calories and 50% less fat compared to those “other” brands and wait for it...you can read and recognize each ingredient on the back of that package.
Have a gluten allergy to worry about? No problem. They have a gluten free version as well. Don’t let all of this organic and real ingredient talk scare you into thinking it won’t taste good. I am probably one of the pickiest of critics when it comes to good eats, and PERDUE SIMPLY ORGANICS did not disappoint. Let’s be honest though, the true critics are my 14 and 11-year-old’s that let me know their opinion about everything I feed them. What was their take? Empty plates and no complaints. WIN.
This mom appreciates their real ingredients, the ease for those busy days and you just can’t beat their price! It makes me feel good that we can still enjoy a great chicken finger without the guilt.
This week we made PERDUE SIMPLY ORGANICS Lightly Breaded Chicken Strips with Greek Tzatziki Sauce (see recipe below) and a side of steamed broccoli. So so good.

Easy Greek Tzatziki Sauce
2 cups plain full-fat Greek yogurt
1 cup shredded cucumber
2 Tbsp lemon juice
1 Tsp grated lemon zest
2 cloves garlic minced or grated with microplane
1 Tbsp chopped fresh dill
Salt and pepper to taste
Mix together yogurt, cucumber, dill, garlic, and lemon juice and zest. Season with salt and pepper to taste. If you like yours a bit creamier, I sometimes add a Tbsp of mayonnaise for a richer depth of flavor. Although not authentic, I like it!
