Baked Green Bean "Fries" with Ranch dipping sauce!

Great alternative to the "traditional" green bean casserole....

Ever see the commercial for a popular chain restaurant who serves green bean fries? Conflicting thoughts entered my mind. On one hand I felt that you should not have to take a perfectly healthy vegetable, bread it and fry it to get people to eat them? As veggies go, green beans are pretty non-offensive. Most kids eat them and are a staple in most house holds. On the other hand, breaded fried green beans must taste delicious. If my kids eat steamed green beans then they will love green bean fries.

My mission was to create a tasty baked version of green bean fries that can be served along with dinner or as an appetizer. The recipe below was a hit with everyone. I hope you will give them a try one night with dinner.


6 oz container fat free Greek yogurt
1 tbsp mayonnaise
1/2 tsp dried dill
1/2 tsp dried parsley
1/2 tsp dried basil
1/4 tsp garlic powder
1/4 tsp salt
1/2 tsp Worcestershire sauce


1 lb fresh green beans, washed  
2 eggs, beaten
1/2 cup seasoned bread crumbs
1/2 cup grated parmesan
cooking spray


Combine first 8 ingredients in a bowl and refrigerate. Preheat oven to 375 degrees. Spray baking sheet with cooking spray. Bring a sauce large pot filled three quarters of the way full with water to boil. Fill a bowl with ice cubes and water. Drop green beans in the water for 2 minutes to blanch. Drain beans and immediately place them in ice water so they stop cooking. Drain the beans after a coup of minutes and place back into the bowl without water. Pour in two beaten eggs and toss the beans to coat. Combine bread crumbs and grated parmesan on a plate. Give the beans one more toss in the egg. Working with small handfuls, coat the green beans with the bread crumb mixture and lay them in a single layer on the baking sheet. Once all the beans are coated and on the sheet, give them a spray. Bake in the preheated oven for about 10 minutes or until the coating has browned. Remove from oven. Serve along with the dipping sauce.
