Ingredients:

4 Orange Peppers

8 ounces of Whole Wheat Spaghetti

(it's easy to substitute whole wheat noodles for the other kind, your kids will never notice the difference)

Jar of your favorite Spaghetti Sauce

1 pound of ground chicken or 96% lean ground beef

Directions:

Preheat oven to 350 degrees.  Cut tops off of peppers and set aside.  Clean the seeds out of the inside of peppers.  Using a knife cut two small triangles for the eyes and one small triangle centered and beneath the eyes.  Place peppers standing upright in a baking dish.  Cover the bottom of the pan with water, about an inch deep.  This will cause steam and help to cook the peppers.  Place peppers in oven and set timer for 30 minutes.

Next, place a pan of water on to boil for the spaghetti.  In large skillet brown the meat.  Drain.  Water should be boiling.  Place spaghetti in pan to cook.  Open jar of spaghetti sauce and pour over meat.  Heat through thoroughly.  Drain water from spaghetti.  Mix noodles into skillet of meat and sauce.  When peppers are tender to the touch they are finished and can be removed from oven.  Spoon spaghetti and meat sauce into peppers.  Leave some hanging over edges to hint at "pumpkin guts" spilling out.  Place tops back on and serve with some garlic bread.

Total cooking time of right around 30 minutes.  It's delicous and if you have the time, cook the spaghetti and meatsauce, and then spoon into peppers, cooking together in oven.  The peppers will add a nice flavor to the meatsauce!  Our family's dinner every Halloween, it's the only way I can get my son to eat peppers.
