Bacon, Egg & Cheese Cups

What I love about this recipe is how it is super easy to make, low calorie (100 calories each cup), and it's a kid friendly recipe (meaning even my 4 year old can really help with making them).  We even make these for dinner, and then eat leftovers for a quick breakfast the next day. They would also be a great brunch addition as well!  You can customize with some of your other favorite ingredients. Veggies, meats, different cheeses, turkey bacon, the combinations are endless.  If everyone in your family likes different ingredients, this is an easy way to give them what they like with out going through a lot of effort. 
 
Bacon, Egg and Cheese Cups
 
Ingredients:
Bacon 
1/2 cup Shredded Cheese
8 eggs
Salt (to taste)
Pepper (to taste)
 
Instructions:
Preheat oven to 350

  • Spray with Pam a 12 cup muffin pan
  • Mix eggs, salt, pepper and cheese in a bowl
  • If using the precooked bacon, use it as is and wrap it in each muffin tin. If using regular bacon then cook it prior to wrapping it in each muffin tin
  • Pour in the egg, cheese mixture in each cup, inside the bacon
  • Cook for 30-35 minutes
  • Take out of the oven and pop out of the muffin tin.  Should pop out fairly easy.
