Brunch at Char's with Eggland's Best Eggs

I recently hosted a brunch at my house with some pretty terrific ladies who I am lucky to call friends.  Our brunch high-lighted Egglands Best Eggs, which my family loves.  The yolks are richer yellow, they have a longer expiration date,  Egglands Best is hands down Superior in nutrition.   They have more then double of the omega-3's, 4x more vitamin D, 10x more vitamin E, only 60 calories, and they stay fresher longer then ordinary eggs.  How do they stay fresher longer you ask?  Egglands Eggs delivers their eggs to their grocer's in about 72 hours after they are laid.  Amazing right?!

So about that brunch.  Everyone just loved the recipes I created and the kids thought the hard boiled beet eggs were fun to make and eat!  We enjoyed Mini Phyllo Quiche Cups, Egg Salad on Rye Squares, Charcuterie Plate, Mini Baked Brie Bites with Preserves, Pickled Beet Eggs, Deviled Eggs, and Monkey Bread. One of everyones favorite was hands down the Mini Phyllo Quiche Cups.  Super easy to make and I am sharing the recipe with you below.

Mini Phyllo Quiche Cups Recipe

Ingredients:
15 Ready Made Mini Phyllo Cups
2 Eggs
2 TBSP half and half
a pinch of salt, pepper, and garlic powder
A handful of your favorite veggies - raw or cooked
1 oz coarsely grated cheese - any kind!

Directions:
Heat oven at 350. Put cups in lightly sprayed mini cupcake pan. Whisk together other ingredients and pour in cups. Bake for 9-10 minutes. Enjoy!
